Abstract

The study of Coliforms and Escherichia coli (E. coli) in raw pork and raw beef at the Daoheuang market Pakse City, South 8 market and 14 kilometer market of Beaching Chaleunsouk District Champasack Province. This study aimed to determine the coliform quality of the  raw pork and the raw beef with special emphasis on Escherichia coli in food  by Most probable number (MPN) technique in this study, 60 samples (30 samples of the raw pork and 30 samples of the raw beef), 120 parameter were randomly selected from 30 stores (Daoheuang market, 10 stores of South 8 market and 10 stores of 14 kilometer market), The findings of this study revealed that coliform bacteria were detected in  between 22 MPN/g to >1600 MPN/g of the raw pork samples and between 25 MPN/g to >1600 MPN/g of the raw beef samples, The E. coli contamination ratio of samples in the raw pork were 38 MPN/g to >1100 MPN/g and the raw beef between 29 MPN/g to >1100 MPN/g in all 120 parameter, 60 samples in 30 stores respectively, It was concluded that the most of the coliform and E. coli contamination in the raw pork and the raw beef from the stores was level exceeded the standard level of the Ministry of Health, Food and Drug Administration (Lao PDR), So the value detected is directly harmful to the health of raw consumers.
